Maltitol is a sugar alcohol (Polyol) in the forms of white Crystalline Powder or colorless neutral viscous liquid , easily soluble in water ,but not in methanol or ethanol .Maltitol has moderate viscosity and boiling point, its melting point ranges from 148 to 151, it has 85%-95% of the sweetness of sucrose but only 5% as caloric .
Maltitol has no free hydroxyl group in its chemical structure. It does not cause Maillard reaction when being heated together with protein and amino acid .it is stable to heat and acid .
