The main components in the D-xylose and L-arabinose Syrup are D-xylose, L-arabinose and glucose etc. All of these are 5-carbo sugar; therefore, D-xylose and L-arabinose Syrup can be used in Maillard Reaction together with the Amino acid successfully. According to Healtang's research data, it shows that when adding D-xylose and L-arabinose Syrup into the Maillard Reaction, the reaction speed will be enhanced 40%. The product quality (appearance & smell & fragrance) will be much better than using other syrup.
